Yes it does. However, if you are only sensitive to it, it is an ideal product, since its long fermentation causes it to decompose or break down this protein.

None of our products contain chemical preservatives like commercial bread. Therefore, if it is not going to be consumed within a period of two days, we recommend freezing it well sealed on a Ziploc bag. Avoid keeping it in the refrigerator, it will accelerate its aging.

Sourdough is obtained by letting a mixture of flour and water ferment for several days, allowing wild bacteria and yeasts present in the environment to colonize the mixture.

Over time, these bacteria and yeasts develop and create a living culture of microorganisms in the sourdough, which act as leavening agents to leaven the bread. Once sourdough has been created, it can be used to ferment and rise bread dough. Sourdough provides unique flavor, aroma and texture to bread, and can also improve its nutritional value, since the bacteria and yeasts present in sourdough help break down the nutrients in the flour, making them more easily digestible and available to the body. .

Our products are made in a facility that uses: cereals containing gluten, eggs, milk and dairy derivatives. May contain traces of saturated fat, walnuts, hazelnuts, almonds, pecans, pistachios and dried fruits, sesame, poppy and chia seeds.
